Harira moroccan tomato soup

Today I wanted to share with you the harira recipe. It is one of the most popular soups in Morocco- served during the Ramadan month. I like to serve it as well during the cold winter days.
It is a very nutritious and rich in good ingredients soup. Your family will love it!
Soup can be served:
- as a starter
- with a toast bread e.g. for lunch.

Ingredients:
5 tomatoes
1/2 celery stick
1 tablespoon of tomato paste
1/2 cup of lentils
1 big onion
400 g of canned cheakpeas
150 g of beef
2 tablespoons of chopped cilantro
2 tablespoons of chopped parsley
2 tablespoons of vegetable oil
1 egg
2 teaspoons of flour
Pinch of saffron
1 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of ground ginger
1/2 teaspoon of ground tumeric
1 cinnamon stick
The inspiration for this soup came from the recent trip to Morocco. My mother in law is preparing the best harira ever but as they say every home has its own and different flavour of harira, so it is mine :) I decided to cook it now as the winter started here and it is always good to eat something hot to warm up after being outside for some time.

Preparations:
1. Chop onion, parsley and cilantro.
2. Cut beef into a tiny pieces, so it is easy to cook.
3. Peel and blend tomatoes together with the celery stick.
Cooking:
1. Add 2 tablespoons of vegetable oil to the pot.
2. Add onion and fry it on medium heat for 3-4 minutes, mixing from time to time.
3. Add beef and fry it for 6-7 minutes, mixing from time to time.
4. Add spices, except cinnamon, mix it well and fry all together for 3-4 minutes, mixing from time to time, to get all the flavours combined.
5. Dodaj 1/2 cup of lentils and fry it for 2-3 minutes.
6. Add 1 litre of water, mix it, cover the pot and cook for 30 minutes, mixing from time to time.
7. After 30 minutes check whether lentils are cooked, if yes add 1 litre of water, cover the pot and bring it boil.
8. Once the soup is boiling add tomato paste mixed with the 5 spoons of the soup base.
9. Add blended earlier tomatoes with celery stick, parsley and cilantro, mix the ingredients and cook for 15 minutes, mixing from time to time.
10. After 15 minutes of cooking time add cheakpea and adjust the spices. I added pinch of salt.
11. Add 2 teaspoons of flour diluted in the water in the way that does not contain any lumps.
12. Whisk an egg with the fork and slowly add it to the soup.
Soup is ready to be served. I like to wait a litlle while before serving it to let all the ingredients come together. I like to add 2 tablespoons of lemon juice to tune the flavour. In Morocco this soup is served with dates.
