Today I wanted to share with you the red lentil soup recipe. It is very easy and fast to prepare, very good recipe when lacking time. I love to prepare this soup in the winter time as chili can really well warm us up :)
Soup can be served:
- as a starter
- with a toast bread e.g. for lunch.

Preparation time: 10 min
Cooking time: 20 min

Ingredients:
1 cup of red lentils (250 ml)
1 onion
1 carrot (optional)
2 tablespoons of olive oil
1/2 teaspoon of spicy paprika
1/4 teaspoon of black pepper
1 teaspoon of salt
1 liter of water

I have to admit that the inspiration for this soup came from the recent trip to Turkey. We have tasted it for the first time there. Eventhough legumes does not belong to my favourites, I believe that treated well are enjoyable as well.
1. Cut the onion and carrot into bigger squers. Transfer an onion to the pot in which you will be cooking the soup and fry until it turns golden, add carrot and fry it together for another 2-3 min.
2. Rinse lentils with the cold water and add them to the pot.
3. Add water and cook for 25 minutes or until lentils are cooked.
4. Once the lentils are cooked add the spices and blend it. Adjust the spices.
Soup is ready to be served. I serve it with the quater of a lemon.
