Healthy Sweet Potato and Banana Brownies
Healthy sweet potato and banana brownies, with no flour and no butter — the sweetness comes from the vegetable, the fruit and 20 g of sugar. A baked sweet potato and a banana are mashed with melted 70% chocolate, and a whipped egg white folded in at the end is what keeps them from turning dense. Blueberries go on top before they bake.

Method
- Heat the oven to 220 °C (425 °F) and bake the sweet potato for about 25 minutes, or until it is soft all the way through. Let it cool.
- Melt the chocolate — Natalia does it in the microwave.
- Scoop the cooled sweet potato into a bowl with the banana, the melted chocolate, the cocoa, the potato starch, the grape sugar and the bicarbonate of soda. Mash and mix until smooth. Everything goes in at this point except the egg white.
- Whip the egg white and fold it into the mixture gently. Gently is the point — it is the only thing keeping these light.
- Pour into a lined tin, scatter the blueberries over the top, and bake at 180 °C (350 °F) for 25 minutes.
- Let them cool before cutting into squares.
Natalia serves them with strawberries, blueberries and dark chocolate grated over the plate.
