Red Lentil Soup
Very easy and fast, and a good recipe for days when time is short. I love making it in winter, because the chilli really does warm you up.

Method
- Cut the onion and the carrot into large chunks. Put the onion into the pot the soup will cook in and fry until golden, then add the carrot and fry together for another 2–3 minutes.
- Rinse the lentils under cold water and tip them into the pot.
- Pour in 1 litre of water and cook for 20–25 minutes, or until the lentils are soft.
- Once the lentils are cooked, add the spices and blend. Season with salt and pepper to taste.
The inspiration came from a recent trip to Turkey — that is where we tasted it for the first time. Pulses are not my favourite thing, but treated well I think they can be very good.
The soup is ready to serve. I serve it with a quarter of a lemon.
