Easy Turkey Tajine with Apricots and Raisins
An easy turkey tajine with apricots and raisins, in which nothing is seared in a separate pan and the sauce makes itself. The onion, oils and spices go straight into the clay pot, the turkey gets massaged into them, and it browns in the same dish it cooks in. Two hours on a low heat is all it asks. The dried fruit cooks separately in butter and cinnamon, so it stays glossy instead of disappearing into the sauce.

Method
- Chop the onion straight into the tajine with both oils, the spices and the garlic.
- Add the turkey and massage it into the mixture until every piece is covered.
- Parsley in, then brown the turkey on all sides — in the same dish, with no separate pan.
- Add the water and the cinnamon sticks. Cover and cook on a low heat for about 2 hours, spooning the sauce back over the turkey from time to time.
- Meanwhile, cover the apricots and raisins with water in a separate pot and cook for about 20 minutes, until the water has gone. Add the butter and the ground cinnamon and cook until the fruit is glossy.
- Once the sauce in the tajine has thickened, add the fruit, trickle the honey over the top, and finish with the sesame seeds.
Serve it in the dish it cooked in, with bread for the sauce.
